Stromboli


1/2 lb. lean ground beef
1 (13.8-oz.) can Pillsbury® refrigerated classic pizza crust
1/4 cup pizza sauce
4 oz. (1 cup) shredded mozzarella cheese
1/4 cup chopped green and/or red bell pepper, if desired
1/4 teaspoon dried Italian seasoning
Heat oven to 400°F. Spray cookie sheet with nonstick cooking spray. Brown ground beef in medium skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain. Set aside.
Unroll dough; place on sprayed cookie sheet. Starting at center, press out dough with hands to form 12x8-inch rectangle.
Spread sauce over dough to within 2 inches of long sides and 1/2 inch of short sides. Place cooked ground beef lengthwise down center, forming 3-inch-wide strip and to within 1/2 inch of short sides. Top with cheese, bell pepper and Italian seasoning. Fold long sides of dough over filling; press edges to seal. Bake at 400°F. for 15 to 20 minutes or until crust is golden brown.


Ham & Cheese Roll Ups


2 cans of biscuits
Ham
Shredded cheese


Open the tube of biscuits. Take two at a time and roll them out fairly thin on a cookie sheet. (No need for extra flour.) Place a slice of ham in the center and add some shredded cheese. Roll up the biscuit and dip the rolled biscuit in the shredded cheese. Place the roll cheese side up and bake until browned slightly, about 10 to 12 minutes.


*2 cans of biscuits make 10 roll ups (10 biscuits per can). Adjust according to the size of your family. A smaller version of this could also be used for appetizers using only one biscuit per roll up.


Easy Chili Pie


4 cups leftover chili
or leftover chili and enough vegetables to make 4 cups
cornbread batter
cheddar cheese (optional)


Pour 4 cups extra chili in a deep pie or casserole dish. (Add one can corn or other mixed vegetables if you have a little less than 4 cups.) Prepare 1 recipe cornbread batter according to directions. Drip batter over chili. Bake at 375° for 30 minutes or until the cornbread is done. Sprinkle with shredded cheddar cheese if desired.


Chili Cheese Potatos


4 Baking potatos cheddar chees
left over chili sour cream
salsa


Bake potatos in the microwave and top with chili, cheese, salsa and sour cream.


Pocket Sandwiches


2 cans of crescent rolls
1 lb of roast beef
8 slices of american cheese


Take two crescent rolls and pinch sides together to make a rectangle. Put some roast beef on crescents then cheese. Top with another crescent “rectangle” and pinch down all sides. Bake as directed on package.


*You can also make chicken pockets, pizza pockets or ham and cheese.


Rice and Hamburger


1 lb of browned hamburger
1 box of Rice a Roni


Cook rice as directed on box and mix in hamburger.
