Pancakes

2 ¼ cups baking mix
1 ½ cups water
¼ cup sugar
2 Tbsp. vegetable oil
1 egg
Mix ingredients until moist. The batter should be lumpy. Cook on a hot greased griddle. Flip when bubbles break on the surface and the edges begin to dry.

Makes 15-18 medium pancakes.

Applesauce Pancakes

2 cups dry pancake mix
1 teaspoon ground cinnamon
2 eggs
1 cup applesauce
1 teaspoon lemon juice
1/2 cup milk

In a large bowl, stir together pancake mix and cinnamon. Make a well in the center of the pancake mix. Add the eggs, applesauce, lemon juice and milk; stir until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Oatmeal Cookie Pancakes

2 cups buttermilk
2 cups old fashioned Quaker Oats
2 Tablespoon sugar
1/2 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 cup raisins
1/4 teaspoon salt
2 eggs-beaten
1 Tablespoon melted butter

Mix buttermilk, oats and raisins in a bowl and cover with plastic wrap. Let set in refrigerator overnight. You can also prepare dry ingredients night before by mixing together. Can leave it out at room temperature overnight.
Next morning add eggs and butter to oatmeal batter. Stir in dry ingredients. Spoon out with 1/4 cup in griddle (greased hot) and flip when ready.

Great with confectionery sugar or with syrup.

Sweet Potato Pancakes

1C flour                                      1 egg (beaten)
1/4 C wheat germ                        1 1/4 C milk
1T brown sugar                          1/2 C sweet potato puree (baby food)
2t baking powder                        1 T oil
1/4 t salt
1/2 t cinnamon
1/4 t nutmeg

Combine all ingredients. Spoon out with 1/4 cup in griddle (greased hot) and flip when ready. Spoon onto greased griddle and flip when ready. Serve with Honey and Cinnamon Butter and Pancake Syrup

Honey and Cinnamon Butter

Butter
honey
cinnamon

Combine to your liking.

Pancake Syrup

1 C white sugar
1 C water
1 C brown sugar
1 t vanilla

Bring first three ingredients to a boil. Add vanilla when cooled a bit. Store remailing syrup in a recycled bottle and store in the refrigerater.

Basic Muffins

2 ¼ cup baking mix
 ¾ cup water
¼ cup sugar
1/3 cup vegetable oil
1 egg

Mix dry baking mix and sugar. Add egg, water and vegetable oil to dry ingredients. Mix only enough to moisten flour. The batter will be lumpy. Fill greased muffin tins two thirds full. Bake at 400° for 20 minutes.
*For an added surprise fill muffin cup halfway and then add a spoonful of jelly. Top with more batter. Add raisins, cinnamon or nuts for gourmet muffins.

Makes 12-15 muffins.

Oatmeal Applesauce Muffins

1C oats
2 egg whites
1C milk
1 t baking powder
1C flour
½ t baking soda
½ C brown sugar
½ t salt
½ C applesauce

Combine oats & milk and let it soak for 1 hour. Combine all dry ingredients. Add all ingredients together. Bake in muffin tins for 25 minutes at 400 degrees.

Sausage McMuffins

12 English Muffins (toasted)
1 dozen eggs (scrambled)
12 frozen, pre-cooked sausage patties
12 slices of cheese

Assemble sandwhich. Wrap in aluminum foil and place in a gallon sized freezer bag. Heat in microwave.

* If adding egg, let the sandwich thaw in the refrigerator over night.

Breakfast Burritos

4 pre-made hash brown patties
4 eggs
Grated cheese
Garlic salt
1/2 pound pork sausage
1 T. cooking oil
Flour tortillas

Brown sausage in a large skillet, drain and then set aside. Next, brown the hash brown patties. Then join the sausage and hash brown patties together and add eggs and garlic salt. Continue to brown and stir food for another 5 min. Serve on a warm flour tortilla and sprinkle cheese on top!

Donuts

1 tube refrigerator biscuits
peanut oil
cinnamon and sugar
Poke a hole in the center of dough. Fry in oil til golden. Shake in cinnamon and sugar.

Monkey Bread

4 cans of biscuits, cut into quarters
1 C sugar
4T cinnamon
1C melted butter

Combine sugar & cinnamon in a ziplock bag. Cut biscuits and shake in bag. Pile biscuits in a greased bunt pan. Mix remaining sugar & cinnamon with the melted butter and pour over biscuits. Bake for 30 minutes at 375 degrees.

Breakfast Cookies

¾ C flour
1 t vanilla
½ C brown sugar
½ t cinnamon
1 med. Apple (chopped)
½ t baking powder
1 ½ C oats
2/3 C softened butter
1C shredded cheddar
1 egg
¾ C raisins

Mix flour cinnamon and baking powder. Stir in butter, egg, brown sugar & vanilla. Then apples oats, cheese and raisins. Drop by spoonfuls on a greased cookie sheet. Bake for 15 minutes.
At 350 degrees. Store in an airtight container.

Cinnamon Peanut Butter Toast

Spread peanut butter on your favorite toast and sprinkle cinnamon and sugar on top. Mix it in a bit.
This is really good with a cup of hot cocoa!
